Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, diced
  • 4 cups beef broth
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour
  • 2 tbsp butter

Method

  1. Cook the ground beef: In a large pot, brown ground beef over medium heat until fully cooked, breaking it apart as it cooks. Drain excess fat and set beef aside.
  2. Sauté vegetables: In the same pot, melt butter and add diced onion and minced garlic. Cook for 3-4 minutes until onion is softened.
  3. Cook potatoes: Add diced potatoes, garlic powder, onion powder, and beef broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Thicken soup: In a small bowl, whisk together milk and flour. Gradually stir into soup and cook 5 minutes to thicken. Stir in cheddar cheese and sour cream until melted and creamy.
  5. Finish: Return cooked ground beef to pot and stir. Season with salt and pepper. Simmer a few more minutes to blend flavors.
  6. Serve: Ladle into bowls and garnish with fresh parsley or chives.
