Method
- 1Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.
- 2Cook the ground beef: In a large skillet, brown the ground beef over medium heat. Add the diced onion and red bell pepper and cook until they soften, about 5 minutes.
- 3Add BBQ sauce: Stir in the BBQ sauce and simmer for 5-7 minutes until the mixture is heated through and slightly thickened. Remove from heat.
- 4Prepare potatoes: While the beef mixture is simmering, boil the diced potatoes in a pot of salted water for about 10-12 minutes until they are just tender. Drain and set aside.
- 5Assemble the casserole: Layer the boiled potatoes in the prepared baking dish. Pour the BBQ beef mixture over the potatoes and spread evenly.
- 6Top with cheese: Sprinkle shredded cheddar cheese on top of the beef mixture.
- 7Bake: Place the casserole in the preheated oven and bake for 20-25 minutes until the cheese is melted and bubbly.
- 8Serve and enjoy: Let the casserole rest for 5 minutes before serving. Garnish with green onions or parsley if desired!
