Old Fashioned Chicken and Dumplings

Ingredients
- For the Chicken Stew:
- 1 whole chicken (about 3–4 lbs), cut into pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 2 cups water
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- For the Dumplings:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon dried parsley or thyme
- ¾ cup milk
- 3 tablespoons butter, melted
Method
- put stew in pot, bring to boil stirring occasionally
- add dumplings on top the stew, fluffing every so often
