Ingredients

  • 4 cups shredded chicken
  • 4 cups cornbread or cubed dried bread
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 can cream of onion soup
  • 1 1/2 cups chicken broth
  • 2 tbsp butter
  • 1 tsp poultry seasoning
  • 1/2 tsp dried sage
  • Salt and pepper to taste
  • Gravy:
  • 1/4 cup unsalted butter
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup flour
  • Salt and pepper to taste

Method

  1. Preheat oven to 375°F. Melt butter in a skillet over medium-high heat. Sauté onion and celery until tender.
  2. In a large bowl, combine cornbread, shredded chicken, sautéed vegetables, sage, poultry seasoning, cream of onion soup, and a splash of chicken broth. Mix well.
  3. Grease a 9x13-inch baking dish. Spread the mixture evenly and bake for 45 minutes.
  4. For the gravy, melt butter in a skillet and whisk in flour until golden brown. Gradually add chicken broth, salt, and pepper, stirring until thickened.
  5. Stir in heavy cream and simmer for 5-10 minutes until silky.
  6. Drizzle gravy over casserole before serving.
  7. Optional: Garnish with parsley or green onions.
