Easy Parmesan Chicken Pasta

Ingredients

  • For the Chicken:
  • 1.5 lbs boneless, skinless chicken breasts (sliced or pounded thin)
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • For the Parmesan Pasta Sauce:
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup pasta water (optional, to thin sauce if needed)
  • For the Pasta:
  • 12 oz fettuccine or penne pasta
  • 2 tablespoons chopped parsley (for garnish)
  • Extra Parmesan cheese for topping

Method

  1. Cook pasta according to package instructions in salted water. Drain and set aside, reserving 1/4 cup of pasta water.
  2. In a shallow bowl, mix flour, garlic powder, Italian seasoning, salt, and pepper. Dredge chicken in flour mixture to coat.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden and cooked through. Remove from skillet and let rest.
  4. In the same skillet, melt butter and sauté garlic for 1–2 minutes. Pour in heavy cream and stir in Parmesan, Italian seasoning, salt, and pepper. Simmer 3–4 minutes until thickened.
  5. Add cooked pasta to the sauce and toss to coat. If needed, add pasta water to loosen the sauce.
  6. Slice chicken and serve over creamy Parmesan pasta. Garnish with parsley and more Parmesan. Serve hot!
