Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • Fresh parsley, chopped (for garnish)

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, mix together the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  3. Place the flour in another shallow dish, and the beaten eggs in a third dish.
  4. Dredge each chicken breast in the flour, shaking off the excess, then dip it into the beaten eggs, and finally coat it in the Parmesan mixture, pressing gently to adhere.
  5. Heat the olive oil in a large oven-safe skillet over medium heat. Once hot, add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the crust is crispy.
  7. Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
